Title: Leeks Au Gratin

8 Medium leeks
3tbButter
3tbAll-purpose flour
1/2tsDry mustard
1/2tsSalt
1cMilk
1cShredded Cheddar cheese
1cFresh bread crumbs

1. Cook leeks; place in broilersafe 9" x 9" baking pan. Preheat broiler if manufacturer directs. 2. In 1-quart saucepan over low heat, melt butter, stir in flour, mustard and salt till smooth. Gradually stir in milk; cook, stirring, until thickened; stir in cheese till melted; pour mixture over leeks. 3. Sprinkle with crumbs. Broil to brown crumbs.
